Add some flavour with a tomato rice mound

Tomato rice mound(Serves 4)
Ingredients:
2 400g/14oz cans plum tomatoes
2 onions chopped
1 clove garlic, crushed
1tsp dried or 2 tsps chopped fresh basil
salt and pepper
225g/8oz long-grain white rice
450ml water
50g/2oz Parmesan cheese, grated
Method:
- Blend the tomatoes, onion, garlic, basil and seasoning in a liquidiser until smooth
- Cook the rice in the tomato sauce and the water for 15-20 minutes or until the liquid has evaporated, stirring occasionally
- Stir in the Parmesan cheese
- Turn the rice out onto a plate and create a mound or press into a bowl before turning upside down onto a plate and serve
- Garnish with basil leaves
