Easy peasy potato salad




Quick to make and tasty to eat

Potato salad (serves six to eight)

Ingredients:
900g potatoes, peeled
1 tbsp parsley, chopped
4 spring onions, finely chopped
4 hard boiled eggs, shelled
4 tbsp mayonnaise
2 tbsp sour cream or crème fraîche
Salt and freshly ground black pepper, to taste

Method:

  • Peel and boil the potatoes until just tender
  • Drain and cool, then cut in half if they are small, quarters if they are large
  • Allow to cool
  • Mix the mayonnaise with the cream or crème fraiche, the seasoning, chives and spring onions and stir round until everything is well coated
  • Finally, chop the egg into quarters and mix into the salad
