Greenham teenager crowned 'Berkshire's Best Young Chef'
Bradley Montague-Fowley landed the prize after impressing judges with his dish consisting of roast pork loin with a beetroot purée, roasted butternut squash, roast garlic puree, wild mushrooms and a port-and-blackberry sauce.
The former St Bartholomew’s School pupil was presented with his prize by one of the judges, Michelin-starred chef Tom Kerridge, at Langley College last week.
Mr Montague-Fowley, who worked part-time at the Lock Stock and Barrel in Newbury before completing an apprenticeship as a pastry chef at the London Hilton on Park Lane, said: “It is a fantastic honour and one I really didn’t expect.
“One of my mum’s work colleagues told me about the competition, so I owe everything to them really.
“The judges said it was a winning dish that showed everything they were looking for. It was lovely to get those sort of comments.”
To reach the final three, he had to use a set of selected ingredients and create a dish of his choice within 90 minutes, and publish the pictures and description online.
Speaking about his passion for food, he said “It started from a relatively early age when I would see mum cook things in the kitchen and sort of grew from there really.
“I also lived about a five-minute walk from L’Ortolan (the Michelin-starred restaurant in Shinfield) for a while and got the chef’s table for my 19th birthday. That was brilliant.”
Asked which was his favourite dish to cook, he said: “A variety of things. Obviously the one I cooked for the judges is up there along with the braised ox-cheek dish I cooked recently.”
Mr Montague-Fowley already has his next venture lined up – cooking breakfast, afternoon tea and four-course meals six days a week for six months at a ski resort in Val d’Isere, France.
He also reached the final to receive a scholarship at the renowned culinary arts school Le Cordon Bleu, in London.
