Highclere's Yew Tree serves up signature dish
BERKSHIRE'S new signature dish was revealed at the Royal County of Berkshire Show today (Sunday).
Head chef at the Yew Tree in Highclere, Simon Davis, wowed the judges with his imaginative creation using the best of local ingredients.
To crown his victory , Mr Davis whipped up a version of the county signature dish - Berkshire bacon pudding - in the show's cookery theatre.
He used locally foraged, forest chanterelle mushrooms with chunks of Vicars Game bacon, rolled into a suet pudding and served with marinated Berkshire venison, with puree of carrot with star anise served on a bed of lightly pickled white cabbage.
As the theatre audience tucked in, Mr Davis said: "We're lucky to have such a rich variety of great ingredients in West Berkshire.
"This dish will be going on the menu at the Yew Tree."
