TO be able to cook good Indian food, you need to have experienced the life, the culture and the food of the nation, according to the owner of one of Newbury's newest Indian restaurants.
And that is the theory on which, Shahzan Uddin, is building his business, The Mango in Bartholomew Street – traditional cooking by traditional Indians.
Shah, as he is known locally, has a staff of six, with only Indian chefs, and that is why he believes eating at The Mango is like eating in India.
